The Incubator Series showcase four new culinary concepts developed by our talented chefs and bartenders. Food and cocktails are available for pick-up and delivery.
All proceeds go directly to those who have worked to create these unique concepts.

Chef Robin Song, Executive Chef of The Vault at 555 California, has created a modern California-Korean concept inspired by his family heritage and childhood memories. Using recipes passed down from multiple generations and classic Korean dishes as inspiration, Chef Song has creatively combined the flavors and resources from California into his unique, yet comforting approach to Korean cuisine.
Having trained at some of the top kitchens in San Francisco, JunJu is a concept that has combined his passion and love for food, with years of technical experience to produce an exceptionally distinctive approach to Korean staples.

Corridor Sous Chef Beth Needelman presents Schmaltz Restaurant, elevated Jewish comfort food with a modern American twist. You’ll find naturally bold bright colors with the flavors to match. The cuisine is reflective of the diaspora that brought Chef Beth Needelman’s family to America. Flavors reminiscent of Eastern Europe and the Middle East echo throughout the food, providing a comfortable, clean and satisfying way to dine.

Nicole Zell, Sous Chef at Trestle Restaurant presents Ines, Americanized flavors of Argentinian and Uruguayan favorites that were taught to her by her mother and grandmother. Hailing from Uruguayan decent, Chef Zell is excited to revisit her roots and create food that symbolized her upbringing. These special memories and dishes inspired her pursuit of culinary dreams and now are available for everyone to try.
